Cesari Wineries in Valpolicella cavaion veronese

The Cavaion Veronese cellar, built in 1997, was designed around the ageing needs of our wines. This is where our wines rest and develop their character for long periods of time, cradled by barriques and tonneaux on the underground floor.

The whole grape drying process, as well as pressing, fermentation, and the first step of winemaking, takes place inside the Fumane cellar, approximately 9 miles from Verona. Completed in 2021, the building was designed in complete harmony with the territory: its multi-level structure sits at the foot of the mountain, and its architecture pays homage to the surrounding landscape.

The highlight of the winery is the ‘fruttaio‘, a large room where the drying of the grapes that will become our wines takes place. Inside, innovative monitoring systems maintain constant temperature and humidity, creating the ideal environment for the resting of the bunches, which are arranged in crates.
